In the Kitchen: Praline Cookies



Ingredients
1 2/3 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter
2 cups light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup heavy cream (plus more if necessary)
1 cup conectioner's sugar
1 cup pecan halves toasted (optional) and broken into large pieces

Yield: Makes about 3 dozen
Oven ---> 350 degrees

Directions

1) In a bowl, cream butter and 1 1/2 cups light brown sugar until light and fluffy (~2 minutes). Add egg and vanilla and beat until fully combined. Add dry ingredients and beat until combines

2) Drop batter in rounded teaspoons onto baking sheets leaving about 2 inches between each. Bake for 10-12 minutes (or until firm and barely golden). Cool for minimum 5 minutes

3) In a small sauce pan, combine remaining light brown sugar and cream. Bring to a boil over medium heat. Cook and stir constantly, for 2 minutes. Remove from head and add the confectioners' sugar. Whisk until smooth (if it thickens, thin out with cream). Add pecan pieces and stir in. Spoon about 1/2 teaspoon of the praline mixture onto each cookie.
