In the Kitchen: One Pot Pasta


Once in a while, a dish comes along that completely stuns you and causes you rethink all those long hours spent cooking. This is one of them. I mean, it's a one-pot pasta dish. Even when you cook the simplest pasta, you have to use 2 pots (one for spaghetti, one for sauce) but this is extremely minimal clean up and preparation. 

This is literally the easiest pasta to make. Perfect for a quick meal, it only needs 10 minutes of cooking time. No, you didn't read that wrong.. only 10 minutes are needed to cook this.


Pour your broth in first. Then, dump all your ingredients (including the uncooked pasta) into the pot. Wait for it to boil then time it for 10 minutes while stirring occasionally. Then, voila! Dinner is ready ! The tastes and the texture are shockingly good and the sauce is thickened by the starch from the pasta.



Leave it uncovered while boiling on high.

I n g r e d i e n t s
  • 4 cups of chicken/vegetable/beef stock (If your broth is unsalted, make sure you salt to taste!!)
  • 2 tablespoons of olive oil
  • 1 box of spaghetti
  • 3 zucchinis, cubed
  • 4 cloves of garlic, sliced (no need to dice)
  • 2 small onions, thinly sliced
  • 1 large carrot, cubed
  • 1 cup corn
  • 1 head of broccoli, sliced into small florets
  • 1 can of diced tomatoes
  • 1 tbsp oregano, 1 tbsp of basil
  • 1 lb scallops
The great thing about this recipe is that it is completely versatile. We added scallops during the last 2 minutes to give it a more seafood vibe. You can add anything, really. Want a heartier pasta dish? Add Italian sausage. Don't feel like spaghetti? Use macaroni, or rotini. It is so easy to customize to fit your needs for the day.

Pour your soup stock in. Add your ingredients.

Put a lid on the pot and switch to high. When it reaches a boil, take the lid OFF and keep boiling on high for 10 minutes. Give it a big stir every 2 minutes.
